This salad is similar to a regular beans sald but I added cooked quinoa to maximize the nutritional value, you could also add sprouted quinoa.
1 cup water
1/2 cup quinoa
1 cup chickpeas
1 cup kidney beans
1 cup sliced green bell pepper
1/2 cup of corn
1/2 cup sliced avacado
1 cup diced celery
3/4 cup chopped red onion
1/2 cup apple cider vinegar
1/2 cup olive oil
2 tsp minced fresh garlic
2 tsp dried oregano
1/2 tsp ground black pepper
Bring water to a boil, add quinoa, cover and simmer for 10 miuntes. Turn heat off allow quinoa to site for another 5 minutes. Fluff with a fork and allow to cool.
Combine quinoa, chickpeas, kidney beans, green pepper, celery, corn and avacado and onion in a large bowl.
In a small bowl mix vinegar, oil, garlic, oregano and pepper until well blended. Add as dressing to the salad, mix well and serve immediately!
